Wine Making
Barringwood’s 2018 Classic Cuvee was crafted with handpicked fruit from our original Lower Barrington vineyard where the up to 30 years old vines enjoy views across the Don Valley to Bass Strait from their 280m elevation. With a very mild growing season this site is perfectly suited to retaining the natural acidity crucial for long lived premium sparkling wines. 2018 vintage is blend of Pinot Noir 45% Chardonnay 42%, and Pinot Meunier 13%.
Grapes were whole bunch-pressed with only free run juice sent to tank for primary fermentation where extensive batonnage was employed to develop texture and mouth feel. The base wine was then bottled with a yeast addition and the secondary (bubble generating) fermentation completed under crown seal. After 48 months lees aging each bottle was riddled, disgorged and dosaged.

Appearance: Deep Straw, fine bead, persistent mousse
Aroma: Bright citrus, white flowers, minerals and seaspray
Palate: Vibrant, crisp acid line drives through a creamy balanced palate.
Food Match: Enjoy by itself, spiced roast pumpkin, roasted crayfish
